You want to choose good healthy oils like refined coconut oil, sesame, sunflower or safflower that have high smoke points to cook with and use Olive oil and unrefined oils like walnut for drizzleing on breads and salads.
Mixed martial arts fighter, Chris Quitiquit takes great care to eat a healthy diet. He uses fresh organic ingredients and does his own cooking. He has given me some of his own recipes to share with you, I hope you enjoy!
Shrimp/Chicken Pasta
INGREDIENTS
-about 8 oz gold bella mushrooms chopped in halves
-1 package of bowtie and/or penne pasta or whatever kind of pasta you prefer
-about 6 oz chopped black olives
-25-30 shrimp w/and/or about 1 to 1 1/2 calamari steaks (optional) /or 2 chicken breasts (chopped in bite size pieces)
-1 bottle of extra virgin olive oil
-about half yellow or white onion chopped
-about 6-8 oz of sundried tomatoes
-fresh or dried basil
-about 1/2 lb of asparagas chopped in quaters
-about 2-3 cloves fresh chopped garlic
COOKING DIRECTIONS
1.get a large pot for boiling water...add about 1/8 cup of olive oil to water (so pasta doesnt stick) and some sea salt to taste..bring water to a boil and add pasta. pasta should take about 20 min or so to cook, or until pasta is tender...you should be cooking everything else while pasta is boiling so they get done about the same time. strain when done.
2. in good sized cooking pan, heat up pan on medium-high with about as much healthy oil as it takes to very lightly cover the pan half way....add chopped asparagas, bring to a sizzle and sautee about 8-10 min or so but not too long becuase you dont want your asparagas soggy..add some sea salt to taste.
3...next add onions, garlic and mushrooms and cook for about 5 min...(if you are using chicken add it now since it takes a little bit longer to cook than shrimp and calamari..or you can cook chicken seperately if desired and add in at end of cooking)
4. now that the onions, garlic and mushrooms have had a chance to cook a little bit and release thier flavors its time to add the shrimp, calamari, sundried tomatoes and olives (I like to add the olives and artichoke hearts in right before the shrimp is done cooking)...add a few dashes of basil (not too much!) while shrimp/calamari or chicken is cooking...shrimp and calamari should take about 10 min to fully cook on medium high heat
5. now that everything is done get your pasta and drizzle olive oil over your pasta until it has a light coating of olive oil after you toss it (or you can also use marinara, pesto or any other kind of pasta sauce you like goes great with this dish)...add the shrimp and/or chicken mixture and toss around..and thats it!
I also like this dish with homemade garlic bread...for garlic bread crush a 3-4 cloves (depending on how strong you like your garlic) of garlic with a garlic difuser....add garlic to 1/4 cup of olive oil or you can use anykind of butter you like or you can use a little bit of both. microwave on high for about 30 sec-1 min depending on how good your microwave is or you can use a really small sauce pan on medium heat, mix around with a fork...then spread on sourdough or frenchbread and cook in oven at 375 degrees for about 8-10 min or until golden brown. Enjoy!
Stir-Fry Teriyaki Shrimp
INGREDIENTS
-1 cup of fresh cleaned green beans chopped in halves
-1/2 white or yellow onion cut into strips
-a couple cloves of fresh minced garlic is optional
-8oz of white mushrooms sliced
-a few dried red chilies
- about 2doz shrimp/prawns (peeled and tail off) or you can use chicken or tofu sliced into bite size pieces
-vegetable or sesame seed oil
-2 cups white rice (steamed)
-teriyaki sauce or whatever type of asian style sauce you like (i like to use kikkoman takumi collection teriyaki or soy vay teriyaki..soy vay also makes a wide variety of all natural preservative free asian style sauces)
COOKING DIRECTIONS
-first get the rice steaming, it will take about 20 minutes to cook, hint: a rice cooker is the best way to steam rice and the easiest
-next get a large pan or wok and heat up about 2-3 tablespoons of vegetable or sesame seed oil on medium-high..add green beans and fry for about 7 min or so add about a tea spoon of sea salt or to taste...not too long becuase you green beens will get burnt and soggy
-next add garlic and onions (dried red chilies if desired "crushed"); stir fry for about 5 min
-then last add shrimp and/or chicken and/or tofu along with mushrooms (shrimp and tofu should only take about 8-10 min at the most to cook..chicken should take a little bit longer..or you can cook shrimp or chicken seperately and add in with the sauce)
-then when everything is about cooked add some sauce...let sauce carmalize a little bit and then everything should be done...
I like the stir fry mixture over steamed white rice...and thats it! enjoy!
